  • Potatoe and Turnip Rosti

    3-4 medium potaoes washed and grated

    1-2 Turnips peeled and grated

    1 onion, finely chopped or grated

    1 clove garlic, crushed

    Salt and freshly ground black pepper

    3 tbsp olive oil

    Fresh chopped chives or spring onions, to garnish

     

    Dry the grated potato with a clean tea towel to remove as much moisture as possible. Mix with the onion, turnip,garlic and herbs (if using) and season with salt and pepper.

    Heat the olive oil in a large, heavy-based frying pan. Add mounds of the grated potato mixture, flatten the surface with a fish slice, and cook over a medium-low heat for about 10 minutes. The potato needs to cook and brown on the base, so avoid trying to turn them too soon.

    Turn each rosti carefully and cook the other side for a further 10 minutes. Remember to keep the heat low so the inside of the rosti cook without over browning.

    Tip: Grate the potatoes by hand rather than in a food processor where they can become too wet. Once grated use right away to prevent discolouration.

     

  • Veg Box News 10.03.14

    Yes! More sun! which means we have been able to get on the landscape to do all sorts of jobs. This week we have planted out our potatoes, potted up a large number of seedlings includingchillies, tomatoes and peppers. So far we have over 6 varieties of tomato. We have planted our first early potatoes; Casabalanca. I look forward to new potatoes. It is one of the other things about eating seasonally; food becomes more of a treat. In some ways we have been spoiled by the supermarket 24/7/365 food. It is good to be able to have what you want, but if you can get it all the time, it is easy to take it for granted.

    In this weeks veg box the carrots are from Kirton Lindsey, a different farmer but still as local as we can get.

    In the health food supplies side of our veg boxes we took on a couple more lines of product including date syrup and we now have some Tempeh in jars. This is an excellent meat substitute and easier to digest than soya. We also have a new stock of coconut oil. Sadly we do have a few out of date items, (I hate to have waste) These are for sale for half price and include wasabi peas, hemp seeds and some fair-trade cookies. We need a few more customers ordering from us to reduce this to a minimum. We would encourage any of our customers to call on site to look at our full range of stock.     Dont forget every pound you spend with us, the 60p goes back into the local community….. spend the same money in a super market and 70p leaves the area!

    Our open day last week went well, we had demonstrations of some of the services we can offer on site and had plenty of great ideas from people keen to add to the areas only environmental and agricultural community enterprise.

    Many of you will know about our break in last week. The third time we have been targeted. This makes us very cross and is a real insult to the good work that we do. We are very sorry that several of the boxes last week were packed wrongly but we had a nightmare of a week and had a new volunteer helping us in the veg room. Hopefully this week we are all back to normal. Don’t forget if you had anything not up to standard or missing from your box, then do let us know and we will give you a replacement for free the following week. We offer a quality guarantee with all our boxes.

    Out on the landscape we have been busy chopping and bagging logs. We sell them for £4 a potato sack full.

    Also we have been busy planting out seeds and moving seedlings into pots ready for planting out as the weather warms. We have some really interesting looking veg for the summer, today for example one of our volunteers was planting sweet chocolate pepper seeds!

    This is the week of the increase in price of the small boxes to £6. Thanks for the messages of support and understanding. Our price still remain very competitive, the £6 veg box this week would have cost you £6.60 from leading supermarkets when compared with equivalent veg.

    Last week we took delivery of British Baked Beans! These are from a company in Norfolk and make use of Fava beans. They are very tasty and buying them supports British Farmers and help our social enterprise project survive. Hodmedod, the company producing them, are also looking at growing Quinoa and producing a range of other products. We sell not only thier baked beans in a rich tomato sauce, but also plain and dried beans and peas and a lovely Dhal. Order with your veg box to give them a try.

  • Veg Box News 27.01.14

    So this week is the LAST week for the £5 boxes they go up to £6 next delivery. Amazing how quickly January has gone, did many of you keep to your new years resolutions. We know at least one customer that tried out VEGANUARY and kept to a very healthy vegan diet for a month. Now that is a bit much for a lot of people, but obviously eating lots of veg and less meat is a far healthier way to live.

    We hope you enjoy the purple sprouting broccoli, we are currently chatting to a grower over near Epworth who grows organic white sprouting broccoli, fingers crossed we can economically get some of that! The potatoes this week are Victoria and make super roast potatoes. The Caulis are Lincolnshire grown and from Boston this week.

    I managed to make the recipe from last week and it was lovely. The pear and celariac really worked well together, I was a bit surprised. I turn this week to a recipe from the Guardian and Hugh FW.

    Out on the landscape the dreary wet days make for hard work so we have turned to getting the fruit poly tunnel ready. This year we are planting Guava and have fitted a simple irrigation system using old hose pipes, kindly donated. Inside we have also started propagating some seedlings, peppers, chillies and a few other early starters. Elsewhere we have been conditioning the soil by adding in manure and compost, getting ready for the growing season.

    Last week we took delivery of a couple of new ranges of food, don’t for get you can order with your veg box or pop out to the van. Every £1 you spend with us stays in the community longer and help our charitable community work. We have a number of organic, healthy alternative products as well vegan, vegetarian and gluten free foods. We also sell fluoride free toothpaste and environmentally friendly toiletries and cleaning products.

    Last week I mentioned that we need to get another 20 customers to meet our targets. I am particularly interested to hear from anyone that thinks their place of work might let us deliver a few boxes as this is a real winner from the point of view of efficiency and reducing food miles.

  • Savoy Cabbage with Lentils

    The wrinkly leaves of savoy cabbage give this lentil dish a great texture. 6-8 servings

     

    • 100 g (4 oz) orange lentils
    • 1&1/2 l (2&1/2 pt) vegetable stock
    • 1 onion, chopped
    • 1 clove garlic
    • minced 1 head savoy cabbage, shredded
    • 2 teaspoons mustard seeds
    • 1 teaspoon ground coriander
    • 1 teaspoon turmeric
    • pinch cayenne, or to taste
    • 1 can plum tomatoes
    • 1 tablespoon lemon juice

       

    Bring the lentils and half of the vegetable stock to a boil and simmer for 15 minutes. Meanwhile, in a second pot, fry the onion, garlic, cabbage and spices for 5 minutes, then add the remaining stock and simmer for 10 minutes. Add the tomatoes and their juice, breaking the tomatoes up with a spoon, and simmer for 10 minutes. Stir in the lentils and lemon juice and simmer for a final 10 minutes. Serve with rice, cous cous or pitta bread.

  • Veg Box News 20.01.14

    I dont know if you find that when you have been away for awhile it takes a while to get back into the swing of things? Certainly it felt manic here last week. We ran out of parsnips for the Friday boxes so had to swap them for calabrese (Broccoli), if this happened to you hopefully you didn’t mind! With the nature of our work this happens sometimes as we dont quite harvest as much as we hoped or we get to one of our suppliers/farmers and they just dont have enough of a particular crop, its just the nature of small scale production. Thankfully we have lovely understanding customers!

    The frosty morning today made the land glisten. The silver sheen somehow makes the landscape look different. The leeks will be a bit sweeter and some of the bugs and pests will be killed off, helping to bring harmony to the ebb and flow of the cycle of life.

    In the £10 box this week we have given customers spring onions and radishes that we have been carefully growing in our poly-tunnel; savour them, as we only managed to grow a few! We also have a few interesting winter leafy salad bits; the first to be ready is an interestingly flavoured and slightly peppery land cress. You can order a bag for 75p as an extra with your veg box. (again only limited supplies) We also have a few fresh Bolivian rainbow/Burning Ember chillies £1 a bag if you want a bit of warming up!

    Some of you may know that in the storms of December one of our poly tunnels was destroyed by the wind, ripping off the poly cover and flapping it about like an old flag. I am pleased to tell you that the kind souls at the YMCA have funded the £500 needed to buy a new cover. We will be replacing it as soon as we get some warm weather in March.

    If I can ask you to get your thinking caps on as we are going to do a big push to get an extra 20 customers in February. For the last 18 Months we have been funded by the National Lottery Local Food Grants and they want us to work with more people. I will remind you again but this is just a quick heads up! I’ve not had chance to try the recipe but it sounded very interesting!

    Happy new year & greetings from your 1st vegbox news of 2014. Can we first of all thank all the lovely customers that ordered our special Xmas box. We had more orders than last year & the feedback has been very positive.

    So our winter boxes being filled with seasonal veg always seem sadly lacking in much variety, but in our efforts of keeping to seasonal and British produce we have to give you what fits this description. As we make more contacts with other growers then we hope to be able to find a couple of other veg that we can include. Sometimes the lack of veg or when we can’t get produce of good enough quality, it means we have to go further afield but where ever possible we provide you with our own grown or UK grown produce. This is why our veg keeps so well, the time from farm to fork is far shorter than the supermarkets usually offer.

    After much deliberation and following feedback from some of our customers we have taken the difficult decision to increase the price of the £5 veg box to £6. This is our first price increase in 3 years. THIS TAKES EFFECT FROM THE 1ST OF FEBRUARY. The additional cost is due the increase in veg prices. So far we have dealt with increases by reducing our profit and reducing the amount we put in the box. Some weeks this has meant that we (and some of our customers) haven’t been happy with the amount of veg in the box. Having the box at £5 reduces the range of veg we can offer you. The increase to £6 brings the cost in line with other box schemes. The prices per kilo are staying the same, so you are still getting very good value for money, it is just the individual price of the box is having to be increased to give more flexibility with the contents.  We hope you understand our thinking and are still able to support us. Obviously if you call on site to collect the box then the price will be £5.50 (as each box has a 50p delivery charge). 

    On site last week some of you may have seen the wassail ceremony conducted by the Grimsby Morris-men. There was the performance of a traditional plough play and plenty of singing and dancing. It was a great day and the Apple Trees of Lincolnshire can feel rightly blessed. We served up some rather tasty soup and it was lovely to have so many visitors on site.

  • Veg Box News 25.11.13

    Its Monday as I start to write this, its cold in the office and I’m wearing thermals. So the winter time is all about staying warm and tidying up. Last week the placement guys did loads of digging and helped clear out the garage of stuff that has been sat there for 3 years, amazing the things we found. As for the digging these guys are like little JCB’s and are doing a stirling job at preparing the ground of the new polytunnel.

    Last week I was in Manchester with Carol, the CEO, presenting to the Lottery about this project; they view us as a successful one, so like us to share some of the achievements we have made. We told them about the over 200 customers we have had, the hundreds of volunteer hours donated to the site, the partnership working, the 13 tons of potatoes we get through in a year or the 7 and a half tons of onions or over 800 cabbages. The amount of stuff we have grown and packed and delivered is phenomenal when you add it all up! Next year these amounts will increase too as we grow more and more ourselves, and as we gain a few more customers. Customers who are realising you can get better quality, better priced and fresher veg from local growers and producers, than you can usually find in the supermarkets. You can feel happy that you are already part of the wise crowd that already knows this and supports a great community project. Thanks and well done you!

    The long black leafy stuff is Calvero Nero or Black Kale. Don’t forget serve with a squeeze of lemon juice to help your body make best use of the nutrients and to add a really great zing to the flavour.

    In veg news this week I have been talking to wholesalers and farmers and the price of some veg has nearly doubled. This is due to flooding abroad which has pushed up the English veg price. Thankfully we have some good farmer contacts and grow some of our own, but this is indicative of things to come. We can’t stress hard enough; Grow some of your own veg! It is easier than you think and you can grow quite a lot in pots and small spaces. We are always happy to give advice and next year we will be running a few workshops and courses.

  • Veg Box News 18.11.13

    On site this week the Princes Trust volunteers have been helping out with a variety of jobs and proving once again that the media images of the youth of today are far from the truth. They have helped plant trees, and a new hedge plus helped with load of general tidying jobs. Their dedication and perseverance, working in all weathers, is inspirational.

    This week we have kindly had donated a large number of old scaffolding boards, very useful for our garden building projects. Recycling old industrial materials like this is another way we can demonstrate practical sustainability. Nothing in nature is thrown away, it all gets used, only humans have rubbish, we should all learn from this.

    On site more work has gone on the poly tunnel. Planting out brassicas and lots of bulbs ready for spring. We have been double fleecing and bringing into the poly tunnels some of our delicate plants ready for the harsh frosts that are forecast.

    This week in the veg box is a healthy selection of root veg. The parsnips and carrots are from North Somercotes and the potatoes are from Kirton. They are a different variety; Melody, and are very good as mash and Baked potatoes. We have harvested some of our celariac and golden beets although we have had to add to our own harvest as we didn’t have enough ourselves for everyone’s box. The weird knobbly veg, incase you didn’t know, is a celariac. To use, simply peel and grate and used raw in salads of coleslaw. Or you can chop it into chunks and roast it or use like a potatoes. It is great mixed with potatoes to make an interesting mash. The Candy beetroot are really interesting; stripy red and white when you slice through them. Enjoy!!

    That purple sprouting broccoli last week was delicious! I hope you enjoyed it as much as I did. This week its back to one of our favourites; kale. We have supplied 2 types so you will either be getting a red kale or a green kale, we didn’t grow enough to give all the boxes the same type so there is a difference between the individual boxes. You will see also in the £8 boxes a lemon, remember serve the kale with a healthy squeeze of lemon juice after cooking; the vitamin c gives a delicious zing to the kale but also helps your body make better use of the nutrients. (Individual lemons for sale 35p or 3 for £1) We have also given you a taste of the season; sprouts. We will be giving you a stick of these with our Christmas Dinner box on the 24th December. Last year a stick of our sprouts was about half the price of what the supermarkets were charging. Keep looking out for our announcement at the beginning of December when we start to take orders for the Christmas Dinner boxes

    Talking of Christmas, Kylie has been busy with making up some lovely looking gift food hampers; a great idea for an unusual present. Please do check out the pictures on our facebook and website. This year we will also have a limited number of fresh Christmas wreaths and some tables decorations. Again more details to follow.

    On site we have had a a new raft of volunteers helping clear the weeds and do more of the tidying up. It’s interesting to watch volunteers over their time here; you see them go from slightly unsure sometimes with no ideas about plants and wild life. Slowly they get more confident and become part of the team, joining in with the tea break laughs, some even go onto start to grow their own veg at home. It is something we really encourage, grow your own, even if it a just a few windowsill herbs and some living salad. This year I grew some beetroot in plant pots as well as some radish, herbs and salad stuff in an old guttering. Its good to grow! We do sell plants as well as veg so you might even be able to buy some plants from us. We are currently selling winter hanging basket for £5.50 and also £3 for the hanging planter ‘socks’
